Vegan Black Eye Bean Curry

Ingredients

  • 500 g of black eye beans that have been soaked overnight
  • 4 tomatoes- cut into cubes or 1/2 a tin of tomato puree
  • 5 potatoes cut into cubes
  • 1/2 fresh coconut
  • 1 spoon of pepper
  • 1 spoon of poppy seeds
  • 2 spoons of ginger paste
  • 1 spoon of chili powder
  • 1 spoon of coriander powder
  • a pinch of turmeric powder and salt
  • 1 piece of cinnamon, clove and bay leaf
  • mustard seeds
  • curry leaves
  • oil

Cooking Instructions

  1. Grind coconut, poppy seeds and pepper as a smooth paste.
  2. Heat oil in a pressure cooker,  then add mustard seeds, curry leaves, clove, cinnamon, bay leaf, turmeric powder and ginger paste.
  3. Now add the coconut paste prepared in the first step, let it fry for 5 minutes
  4. Add tomato pieces, potatoes, black eye beans, coriander powder, chili powder and salt. Mix all ingredients well.  Now add water as required and wait for four whistles.
